The Heritage Story

A Legacy That Started At A Railway Station

In 1902, the concept of the restaurant was started when a small outlet inside the historic Maddur Railway Station was established under the name VRR Canteen (Vegetarian Refreshment Room) by Ramachandra Budhya.

Then, in 1917, the famous Maddur Vade was born out of necessity. Initially prepared like a pakoda, its shape was later flattened to cook faster and efficiently manage the heavy train crowds looking for a quick bite.

Over the years, the canteen grew in reputation across Karnataka. In 1991, the family expanded the legacy and opened Maddur Tiffanys—the first drive-in restaurant on the Bangalore-Mysore highway.

Over a century later, the original recipe, shape, and traditional cooking techniques are preserved and passed down through generations, ensuring every bite carries the authentic taste of history.

The Birth of a Karnataka Legend

What makes the Original Maddur Vada stand out from all other snacks in Karnataka? Discover the authentic craft and history preserved for over a century.

Anatomy of the Perfect Maddur Vada

The Famous Maddur Vada is unlike a traditional medu vada. It is flat, firm, crispy on the outer shell, and packed with onion flakes inside. Our ancestors perfected this recipe by selecting specific ingredients that could travel well without losing their crispness. We continue that practice, sourcing locally and making the dough fresh multiple times a day.

Crispy Sliced Onions

For rich caramel sweetness and distinct texture

Fine Semolina (Rava)

Gives the signature premium crunchiness

Rice & Maida Flour

The perfect binding ratio developed in 1917

Fresh Curry Leaves & Chillies

Infusing authentic spice and aroma

Pure Ghee & Water

Kneaded to form the dense specialty dough

Searching for the best Maddur Vada in Karnataka? The journey always leads back to the original Maddur Vada here in Nidagatta, Maddur, where the authentic flavors first came to life.

"Stopping here is a family ritual. My grandfather stopped at Maddur Station in the 50s, my father took me to the highway drive-in in the 90s, and now I bring my children. The taste of the Maddur Vada has remained absolutely identical over these decades."

Raghavendra RaoBangalore–Mysore Commuter

"The original Maddur Vada here is a masterclass in texture. It's crispy on the edges, firm yet tender inside, and bursting with the sweet aroma of caramelized onions and curry leaves. It is completely different from the soggy imitations you get elsewhere."

Aditi MadhavanCulinary Historian & Food Writer

"You haven't truly completed the Bangalore-Mysore road trip if you haven't stopped at Maddur Tiffanys for hot vadas and filter coffee. The service is fast, the atmosphere is electric with travelers, and the food is legendary."
