A Legacy That Started At A Railway Station
In 1902, a small, humble vegetarian refreshment room was established by Ramachandra Budhya at the historic Maddur Railway Station. It was a simple stop designed to offer comfort to tired travelers passing through the heart of Karnataka.
Then, in 1917, a sudden delay of a train prompted Ramachandra Budhya to create a quick, unique recipe to feed hungry passengers who had very little time. He kneaded together semolina, flour, onions, and curry leaves, patted the dough thin, and deep-fried it.
That quick creation became the legendary Maddur Vada. What was born out of urgency at a railway platform evolved into one of Karnataka's most loved culinary icons.
Over a century later, the original recipe and traditional cooking techniques are preserved and passed down through generations. The heritage thrives today at Maddur Tiffanys.
